Homemade Granola Bars

  • 1 cup oats
  • 1 cup almonds or pecan, chopped
  • 1/4 cup sunflower seeds
  • 1/4 cup chia seeds or flax seeds
  • 1/2 cup honey or maple syrup
  • 1/4 cup virgin coconut oil
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla
  • 2 cups puffed rice or puffed quinoa
  • 1/3 cup chocolate chips
  • 1/3 cup dried fruit, chopped

Instructions:

  1. Preheat the oven to 300 degrees.
  2. Combine the oats, nuts and seeds on a baking sheet. Bake for 10 minutes until lightly toasted, stirring the mixture after 5 minutes. Remove from oven and place in a large bowl.
  3. In a small saucepan heat the honey or maple syrup, coconut oil, salt, cinnamon and vanilla over medium heat. Cook, stirring occasionally, for several minutes until the oil is melted and the ingredients are combined.
  4. Pour the sweet oil mixture into the the large bowl and stir well. Let the mixture cool slightly before folding in the rice puffs, chocolate chips and dried fruit.
  5. Line an 8 x 8-inch baking dish with two overlapping pieces of parchment or waxed paper. Pour the granola mixture into the pan. Fold the paper over the top and press down evenly until the granola is flat and compact.
  6. Let cool & harden for several hours before cutting.

We arrived yesterday just in time for the rain. Looks like we won’t be getting out for any hikes today :(

Hope the skies clear as they predict for tomorrow. We have tickets for the ranger lead hike into the Fiery Furnace. Thank goodness we are doing the 2:00 tour. Maybe the temp will break 50 by then!

I wish I had gotten more pictures of the tunnel. The whole thing was a pretty amazing feat of engineering!

I just made these with cranberries and cacao nibs, sans sesame seeds (didn’t have on hand)…licked the spoon, can’t wait to eat them!

Yum! I have actually been using sunflower seeds, not sesame. I must have wrote it wrong. Just changed the recipe. I am making another batch today and think I’ll try cranberry instead of raisin. We love this snack!

I was *thinking* about substituting sunflower seeds, but didn’t just skipped entirely. Mine didn’t stick together too well, so we’ve been adding to yogurt in the morning with banana, and it’s really good.

Hmm..3rd batch in and haven’t had that problem. Try pressing the bars into the pan really hard while they’re still soft. Of course, eating them with yogurt sounds good too!
